Celiac Disease or a Gluten Sensitivity?

Many people have heard of Celiac disease (also known as celiac sprue, gluten-induced enteropathy, and gluten-sensitive enteropathy), however not as many are familiar with the far more common, non-celiac gluten sensitivity. The main difference between the two is that full blown celiac disease is an autoimmune disorder. Autoimmune disorders are diseases in which the immune system no longer recognizes its own tissue, and begins to attack it as if they were foreign invaders.
